Pantry Challenge-Week 2

Another week come and gone, and the challenge is going great.

This weeks grocery bill was a little less than $25.00 

I have to tell you that I did end up taking a few things out of my buggy before I got to the checkout counter this week because I would have gone over and I was not going to do that.

Just to let you know the few things I bought:

Milk,  juice, apples, bananas, pears, canned pumpkin (only because it was a good sale price and I hated to pass it up)

Now to share with you what our menu consisted of this week for dinner:

Sunday night…Chicken with rice, sweet peas and whole grain bread (Beth’s night to cook)

Monday night…Homemade vegetable soup made with venison and served with cheese and fresh fruit

Tuesday night…Pulled barbque sandwiches made from a roast I had in the freezer along with seasoned potatoes done with diced potatoes tossed with olive oil and lots of seasonings

Wednesday night (church night)…Homemade granola served with blueberries I had frozen from this summer (granola recipe at bottom)

Thursday night…Scrambled eggs, bacon, biscuits, gravy, cheese grits and fruit smoothies that we made later that night for a  snack

Friday night…Out to dinner

Saturday night…Soup and sandwiches

For breakfast this week, we have had oatmeal, cereal, eggs, toast with homemade jelly and juice that we juiced ourselves from apples, carrots, broccoli, and kale

My pantry is still stocked very well and I don’t see any problem making a good variety of meals next week.  My freezers are still full and the things I canned are still abundant, so we are good to go.

I am keeping a running list of what I am getting low on or am out of so I will be ready in February when I go back to the store.

That’s last weeks run down and now we are off on the third week of the challenge.

I want to also share my granola recipe that we have used over and over and that we love…

Nonfat Granola

3/4 cup brown sugar (I use sucanaut)

1/3 cup concentrated apple juice from frozen concentrate

1/2 cup nonfat dry milk

1/3 cup honey

5 cups quick cooking oats

2 Tbl cinnamon

1/2 tsp salt

1/2 cup dried fruit (optional)

Mix sugar, juice, dry milk, and honey in saucepan and heat over medium heat only until sugar dissolves.  Combine dry ingredients and fruit in mixing bowl.  Pour sugar mixture slowly over dry mixture and blend well.  Place on cookie sheet and bake at 375 for 10-20 minutes, stirring every 10 minutes.
