Like last year, the littles awoke to Groundhog Day hot chocolate. They couldn’t have been more tickled with this early morning treat! And since I had all this stuff out and my creative juices were flowing, I threw together a quick little Groundhog Day lunch for the PCP. Now, I kinda flew by the seat of my pants on these, but here’s how the 2012 version went down…
Groundhog Hot Chocolate
1. Use an Oreo Fudge Crème cookie as the base (go with the mint variety…cross my heart promise they are as good as Thin Mints.)
2. Slightly melt two chocolate chips in the microwave for the ears. I just tested every 30 seconds until they were pliable and stuck nicely to the cookie.
3. Use a tube of pre-made white icing (I keep on hand at all times) to adhere edible eyeballs (found mine at AC Moore), slivered almond teeth and a red m&m nose.
4. To attach mine to my mugs, I slightly melted two more chocolate chips and used them to adhere the completed cookie. Fill up the mug with your hot beverage of choice!
Groundhog Sandwich
1. Use kitchen shears or a cookie cutter to form two large round bread slices. Fill your sandwich as normal.
2. Use cream cheese to adhere more edible eyeballs, a half cherry tomato nose and slivered almond teeth.
3. From a third slice of bread, cut two ears. Tuck them into the sandwich.
4. If desired, use an edible marker to draw on a mouth and eyebrows. I think this made mine look a little hokey but whatev.
