Coffeehouse Scones
1c. all purpose flour
2T. sugar
1/2 t. baking powder
1/4 t. baking soda
1/4 t. salt
1/4 c. unsalted butter cold and cut into slices
1/3 c. milk
1/4 c. craisins
1/4 c. chopped walnuts
zest of half of an orange
Optional glaze: orange juice and powdered sugar
- Preheat oven to 400 with rack in middle of oven. Stack two baking sheets together and line the top with parchment paper; alternatively use light colored baking sheets. (This is to prevent the bottoms from over browning.)
- Whisk together flour, sugar, baking powder, baking soda and salt. cut the butter in with a pastry blender or two knives. The mixture should look like coarse crumbs. Blend in craisins, walnuts and orange zest. Add milk and stir just until dough comes together. Do not over mix.
- Transfer to floured surface and knead gently four to five times. Pat or roll into a circle about 5” in diameter and 1” thick. Cut circle into 4 pie shaped wedges and place on baking sheet.
- Bake 15-20 minutes until golden brown and a toothpick comes out clean. Top with glaze mixed of orange juice and powdered sugar, if desired.
Around lunch time, Sister and her family headed off for a few days in Disney (I’m positively green with envy) and the baby and I hit the road to Savannah with Mother and Daddy-O. Enthralled in FOUR new Scooby Doo movies purchased by my parents for the ride, we barely heard a peep out of the baby and I was able to finish up two books I’ve been working on – Bossypants was laugh out loud funny and Insatiable was just another entertaining vampire read. Thanks bestie M and bestie E for the loans!
Arriving in Savannah just around supper time, we popped into Papa Murphy’s for take ‘n bake pizzas. This is always a treat for me, as I adore their pies and we don’t have one in Atlanta. Daddy-O picked up this darling Mini Murph pizza kit for the baby, complete with all the fixings for one pint sized pizza creation. If I lived here you could pretty much count on the fact that you’d be seeing these at my next kid party!
It’s high time I shut down this computer and got to enjoying the gorgeous day dawning in Savannah!
